Caramelized Onion and Fennel Crostini

INGREDIENTS
2 cups onion, cut into 1/4-inch thick strips
1 cup fennel, cut into 1/4-inch thick strips
2 tablespoons olive oil
1 tablespoon butter
1 teaspoon fresh thyme, chopped
1/4 cup goat cheese or other soft cheese
8 slices baguette, cut 1/2-inch thick diagonally
Olive oil to coat

PREPARATION

  • Heat oil and butter in a medium skillet over medium-low heat.
  • Add onions, fennel, and thyme and sauté until very soft and caramelized, stirring frequently, about 20 minutes.
  • Meanwhile, heat oven to 400°F.
  • Place baguette slices on a baking sheet, brush with olive oil, and bake until lightly browned, about 8 minutes.
  • Spread goat cheese on toasted bread, then top with onion-fennel mixture.
  • Serves 4. Prep time, 15 minutes; cook time, 20 minutes.
